Kumara Cake
Roasted Kaipara Kumara with toasted pumpkin seeds, almonds & pinenuts crushed, shaped & grilled.
Topped with a Kotare Farm Grande Verte fresh fig with ‘fired’ Belle Chevre Manaia Ma cheese.
From Chef’s garden a slick of the lanky chef’s elderberry syrup,
nasturtium flower and salad burnet

The earthiness of the red kumara when roasted caramelises the natural sugars that combine perfectly with the toasted nuts and seeds. This caramelisation continues when the cake is grilled lending itself perfectly to the sweet ripe fig that is topped with the slightly salty forest floor flavour and creamy texture of the torched Manaia Ma goats cheese. The elderberry syrup is compatible with all three components and adds drama and ‘sparkle’ to the finished dish. The peppery nasturtium flower and the hint of cucumber in the salad burnet leaf complete the juxtaposition of tastes textures and colours
